In the beginning was the Truffle
All things issue from it;
all things return to it. To find the origin,
trace back the smell of truffles.
Recognise in your taste memory
and find its mother,
a lemon will temporarily free you of sorrow.
If you close your mind in judgements
and think about the sour rice of vinegar
your tastebuds will be troubled.
If you keep your mind from judging yourself
and allow yourself to be led like little piggies,
your taste buds will find peace.
Close your eyes while you chew.
The truffle hog smelling into darkness, a clarity.
Knowing how much to add and when to yield is strength.
Use your own light miso.
Balancing in eternity.

Spinach salad, cashew mozzarella, mushrooms and nutrional yeast ‘parmesan’
Miso Truffle Dressing
1 T Miso paste, white
1 t Truffle oil, il Tartufo di Paolo
3 T Avocado oil or other tasteless healthy oil
1 t White rice vinegar
a squeeze of lemon juice
a splash of water … about 1 T
- Add all ingredients to a beaker or bowl
- Immersion blender, or whisk, until smooth
- Add the cold water, continue to emulsify with your trusty immersion blender. I use a simple Braun model. It hasn’t let me down yet in over 9 years of dutiful service.

When you recognize the children
and find the mother,
you will be free of sorrow. If you close your mind in judgements
and traffic with desires,
your heart will be troubled.
If you keep your mind from judging
and aren’t led by the senses,
your heart will find peace. Seeing into darkness is clarity.
Knowing how to yield is strength.
Use your own light
and return to the source of light.
This is called practicing eternity.
